My friend Caroline, who when not creating things to do with kale makes incredibly lovely photographs, sent me this recipe for a raw kale salad. While the kids might not eat it--although mine tend to love raw veggies--it's a quick way to make a healthy salad for moms and dads. Enjoy.
One bunch of Lacinto kale, washed well and stems removed. Chop the leaves, throw in a bowl add 3 tablespoons olive oil, two tablespoons fresh lemon juice, a handful of grated pecorino and a dash of red pepper flakes. Serve.
